Creamy Chipotle Shrimp

Ingredients for the Chipotle Sauce
- quarter cup mayonnaise
- 1 cup sour cream
- 2 chipotle peppers in adobo sauce (1 small can)
- Half of a lime, juiced
- 1 clove garlic
- Salt to taste
Preparing the Chipotle Sauce
- In a food processor, add the mayo, sour cream, chipotle peppers (plus a little additional sauce), lime juice, garlic and a pinch of salt.
- Process until the sauce becomes smooth and creamy.
- Taste test to see if you need to add any more lime juice or salt.
Ingredients for the Creamy Chipotle Shrimp
- 1 recipe chipotle sauce (see above)
- 3 tbsp olive oik
- 1 pound shrimp
- 1 red bell pepper, roughly chopped
- 3 cloves garlic, minced
- 3 green onions, sliced with green and white parts separated
- 1/2 cup milk
- 1 jalapeno, sliced and seeds removed
- Salt and pepper
- Optional: Chopped cilantro
Preparing the Creamy Chipotle Shrimp
- Heat 2 tablespoons of olive oil in a saute pan on medium heat. Add the shrimp and saute for 3-4 minutes, or until the shrimp are cooked through and opaque. Remove them to a bowl.
- In that same pan, add another tablespoon of olive oil and add the bell pepper and saute for 4-5 minutes.
- Then add the garlic, white parts of the green onion, salt and pepper. Stir for another 2 minutes.
- Pour in the chipotle sauce and milk and stir to combine. Then add the shrimp back to the pan to warm through.
- Garnish with the green parts of the green onion, chopped cilantro and sliced jalapeno pepper.
