Turkey Pumpkin Chili

Ingredients

  • 2 cups low-sodium chicken broth
  • 1 can pumpkin purée
  • 1 1/2 tsp. ground cumin
  • 3/4 tsp. chili powder
  • 1/2 tsp. cinnamon
  • 1/3 tsp. cayenne pepper
  • 1 lb. lean ground turkey
  • 1 large onion
  • 2 clove garlic
  • 1 small can sliced jalapenos (drained)
  • 2 can white beans
  • Sour cream and Cheddar cheese for garnish.
  • Cilantro (optional)

Serve with bread (like a fresh baguette).

Preparation

  1. In a 5-to-6-quart slow cooker, whisk together the broth, pumpkin, cumin, chili powder, cinnamon, and cayenne. Add the turkey and mix to combine.
  2. Fold in the onion, garlic, japalenos, and beans, and cook, covered, until the turkey is cooked through, 4 to 5 hours on high or 6 to 7 hours on low.
  3. Serve topped with sour cream, Cheddar cheese, and cilantro, if desired. Serve with bread.
